Kale In My Eggs

You might consider this a companion piece to yesterday’s offering.

Because, really, we wouldn’t have today’s post without yesterday’s.

Lately, we’ve been buying a bag of kale instead of the big leafy fresh kale that has to be pulled off the stalk.

So that makes it easier for me to grab a handful in the morning and throw it in with my eggs.

Thus, I’ve been having kale omelets a few times a week.

Now, would I have done this even without the spatulas?

Probably.

But it wouldn’t be as easy to press the kale into the eggs and then fold the eggs over and then flip the entire entity over when the time comes.

So it’s a real nice usage of the spatula.

But I guess I should also comment on the eggs: About a year ago I thought I was developing an allergy to eggs.

After a really long time of some back-and-forth, I had some bloodwork done by some allergists and they told me - nope, no allergies.

I still have to work out some food issues - I don’t have to get into them here.

But after eliminating eggs from my diet for a good long while I have determined they are not part of the problem and I have been enjoying them once more. (What are problems? Starches, for sure - breads, potatoes, rice - and certain meats. Whole grains are better than whites, so I need to start having more brown rice and whole wheat/multi-grain bread.)

Oddly, ever since I have gotten back to eating eggs I hardly ever do the sunnyside ups I used to do - now it’s more of a scramble or an omelet when I make eggs, usually a few times a week.

I think it’s important to mention, too, that I really like kale. Kathy makes it pretty well, but I have also since learned to make it the way she does so I can prepare it on my own if she’s away or if I’m throwing together some kale at lunch time. (It’s not super complicated - I’m just not as vegetable savvy as I am making other foods.)

I guess now that I think about it, there are few vegetables I don’t like. Kale is just one that I consider relatively new because it’s not something I had for most of my life.

So if you haven’t given kale a try yet, you should. It’s good for you, and it tastes good.

Maybe even mix it in with your eggs.
